Takoyaki Base Mix (Makes about 20): 1 cup four, 1 egg, 270cc water, dash salt, 1/4 tsp baking powder. 1. Mix all the ingredients in a bowl. 2. Heat the Takoyaki pan in medium heat. Pour the mix into each hole. Add chopped up octopus pieces, green onions, sliced ginger (typically called Kizami Shoga), a drop of soy sauce, etc. (In Kobe, we used only octopus and ginger. A couple of strands of sliced ginger is a must to create the authentic flavor!) 3. Once the edges are cooked and starting to peel off the pan, use a Takoyaki pick (or an ice pick will do) to turn over each piece. 4. Turn the pieces occasionally. Once the crust turns light brown, remove from the pan and serve with Tonkatsu sauce, Aonori (powdered seaweed seasoning), Katsuobushi (dried bonito shavings.)
